The reason you need the update file is for the Season 1 DLC Pass. Without the v1.2.0 update, the Switch will not recognize the DLC NSPs. The paid DLC includes:

Performance: Docked mode runs at 1080p/60fps. Handheld runs at 720p/60fps. The update does not change the resolution but significantly reduces stuttering during "Dual Double Hooks" (a known issue on v1.0.0).
Save Data: The update is backwards compatible. You will not lose your daily streak when installing the patch.
